I have also been leaning into cooking for myself which I feel like I haven’t done in ages! Yes, I am a trained chef but meal prep has not been my vibe lately. On my list, is prepping my smoothie jars and making a batch of fluffy AF quinoa.

I found a tip years ago on Food 52 to use less water than most packages suggest and to put a tea towel between the pot and a lid after the quinoa cooks to absorb moisture. It’s my go to method for making quinoa, my friends and family love it! I also get a lot of questions about soaking quinoa and adding apple cider vinegar. It helps with absorption of nutrients. In my opinion, all quinoa needs to be rinsed (even if it says it’s pre-rinsed). Make fluffy AF quinoa
